Brut IPA

BJCP 21B

An IPA taken to complete dryness with an enzyme addition, so it finishes below 1.000 and drinks like champagne with a hop aroma. Very pale, very effervescent, almost no body.

What goes wrong

Amyloglucosidase does not stop. It keeps working in the package, so bottle only after gravity is genuinely stable or you will make bottle bombs.
